Roasted Carrots

Oh man! Who doesn’t love a delicious roasted veggie?

It’s fall and the perfect time to start roasting the delicious sweet carrot. (Yum Yum…licking the roasting dish in the corner…)

Here’s how easy it is to roast this beautiful orange root vegetable:

Preheat your oven to 400 degrees

Cut 4-5 carrots cut into pieces like you see in the picture 🙂

1-2 tbsp olive oil

Salt to taste

Roast at 400 degrees for 40 minutes or until tender

These pair perfectly with chicken and rice or in a beautiful green salad. Enjoy!
